• 150 g pearl barley
  • 50 g butter
  • 50 g smoked bacon
  • 1 onion
  • 500 g I FRESCHI DI CAMPO minestrone with 15 vegetables
  • finely chopped chives
  • vegetable stock
  • grated Parmesan
  • 1 tablespoon extra virgin olive oil
  • salt and pepper

How to prepare

Soften the onion in butter and oil, add the smoked bacon in cubes and the barley, then gently fry for a few minutes before adding 3 or 4 ladles of stock and I FRESCHI DI CAMPO minestrone with 15 vegetables.

Leave to simmer over a low heat until the barley is cooked, then adding as much hot stock as is needed.

Once cooked, season to taste with salt and pepper, and serve hot with a dusting of grated Parmesan and chives.
