• 300 g I FRESCHI DI CAMPO Borlotti beans
  • 2 eggs and 2 yolks
  • 70 g Parmesan cheese
  • 50 g flour
  • 50 g breadcrumbs
  • 1 clove garlic
  • 500 g tomato pulp
  • 1 onion
  • chopped parsley
  • salt and pepper
  • olive oil

How to prepare

Boil the beans and blend them with the 2 egg yolks.

Add the grated Parmesan, flour, breadcrumbs and a handful of chopped parsley, salt and pepper.

Mix well and form small balls in your hand.

Dip into the beaten egg and breadcrumbs.

Fry in boiling oil.

Prepare a sauce with finely chopped onion, gently fried in a pan, then add the tomato and season with salt and pepper to taste.

Add the burgers to the sauce and serve piping hot.
